
Les menuets
90 % of the parcel is planted with carignan, cinsault and grenache grapes which go into the menuets. The remaining tenper cent are chosen according to the vintage year among the other varieties. This wine reaches its full charm after two or three years in the cellar, but it can also be drunk straight away. Served at 64°F with gratins, roast lamb, an estocaficada or charcuteries. You can also drink it with some mushrooms (boletus edulis).

Les concertos
This particular blend consists of cabernet-sauvignon, syrah and pinot noir grapes. It is a unique wine with an original mediterranean leaning,matured in oak barrels for several months. With a nose of under-growth and caramel, presenting a palate with predominantly red currant jelly and other red fruit, slightly mentholated, and finishing on a malty note. Meant to be aged, it is a marvellous accompaniment to game, an aubergine and tomato parmesan accompanying a side of roast lamb , or a lovely scrambled-egg omelette (brouillade) of our local truffles… Decant in advance and serve at room temperature. It is also a contemplative wine that can be savoured on its own among good friends.
