Le prélude
This premium wine is made from the same grapes as the quatuors with different proportions and a shorter maturing period. It is a fresh and lively wine with a nice length. It makes a very tasty apritif and accompaniment to cheese as well as fowl,
for instance : shrimps poached with tomato jelly and tapenadecloche,
a calf sweetbread, asparagus and morels cloche
or even a big aïoli platter  !
Serve at 50°F.

Les quatuors
The vintage year blend is composed af 40-60% viognier and 20_30% chardonnay, rounded out with 10% of each of chenin and roussane. Matured for ten months in oak barrels, it improves with a few years' aging in the bottle. It is completely natural wine that has been worth all the care we gave it.
We suggest you to decant the bottle one or two hours before tasting. It is a very balanced wine whose freshness and acidity are followed through with a solid, fortified richness. Round and full-bodied, it has a floral bouquet that evolves toward honey notes and complex aromas of white fruits and citrus with a sweet chesnut finish.
It makes an admirable aperitif accompanied with goats' cheese, a chicken with fig risotto cloche, a roast chicken with morels, or a salt-cod chiffonade (very finely sliced) with fresh cranberry beans* cloche. It is also a lovely accompaniment to desserts, like peaches stuffed with chocolate cloche, or a shep's milk mousse an a chesnut biscuit and chesnut ice cream cloche.

Serve between50 and 68°F.

* "coco" beans in French or "borlotti" beans in Italian cuisine.
